THE CHEF

Born in La Salgar, Asturias, Chef Nacho Manzano started his culinary journey in his family kitchen. With his sisters Esther and Sandra, he transformed Casa Marcial from a rustic village sidrería into one of Spain’s most celebrated dining establishments, earning its first Michelin star in 1999, a second in 2009, and a highly sought-after third in 2024. The Manzano family has since expanded their gastronomic ventures with Gloria in Oviedo and Gijón, Narbasu Restaurant & Hotel (Green Michelin Star), and NM Restaurant (one star).

Manzano’s cuisine is a heartfelt ode to the Asturian landscape.

Carefully sourced mountain herbs, garden vegetables, and coastal seafood are elevated by precise, respectful techniques. His close collaboration with local producers, commitment to short supply chains, and steadfast dedication to environmental sustainability have earned him Michelin’s Green Star for sustainability.
